Ahhh, yes the eternal thought …. how to get off of them. My first
question would be, what is the reason you use carbohydrates as the
measure? I believe it is the metabolism of energy and absorption of
nutrients and conversion of certain carbohydrates into sugar which is
the challenge.

Part of using the ‘carbs’ comes in with a good walking and exercise
regimen. Walking as the front war on it and other exercise as you are
able or desirous.

A major reason a diabetic does NOT want to be on any animal product is
due to the hormones and antibiotics which are added to the animal and
during processing which has an adverse effect on our health, unbeknownst

or not wanting to know by many who love to consume such products.

Now, that is not to say that if you want organic products, that is a
different story. The reason I do not eat organic, I have a week
constitution when I go out to eat.. I say ‘I will eat this and have my
organic when home… etc..’ and I fall down! ;-)
What are or do you identify as your downfall, as all carbs are not bad,
as in white processed sugar and other processed foods. It has taken me
sometime, yet when I go to the grocery I read the labels to avoid many
of the products which come with processed sugar and high fat content.
Thus a comment I made in the original post, we have to start from
semi-scratch in cooking to avoid these items.

This is not to say that we cannot ever have any processed sugar or fat,
just make an effort to eradicate at least 90% of it from our daily
intake. The same goes for most salt, unless it is unrefined sea salt
which has a great deal of trace minerals which we generally do not get
daily.

It is a lifestyle change for sure and well meaning friends and family
will not fully understand until they see you healthier and full of vim
and vigor. Please know it will not happen over night, it took me two
years to feel and look better!

Good luck and thank you for permitting me to share. I still have a ways
to go yet…
