My food –Long and Boring

For you "true Low Carbers" try not to cringe at this. For me, I have a problem
w/"diets" of any kind. I got over 300 pounds by dieting and rebounding from the
depravation. I took off 100 pounds by just taking it one meal at a time, eating
smaller portions. That was decades ago, and I’ve pretty much stayed at 240.
However, 4 months ago I went to 260 and my bg was going way up. That is when I
decided to look at my health more than my food desire. The 30+ pounds I’ve
dropped have stayed gone (this morning I was 225), even tho I ate w/o caring re
the carbs, when my hubby had emergency open heart surgery 8 weeks ago. Stress
is my trigger and carbs are my release. Didn’t gain anything, so, that is good,
and my AC1 numbers show I still stayed on a better course. I am triggered by
stress. Lifelong condition. Food has been a comfort that tides me over until I
can get a grip again. Just the way I am. Not apologizing nor ashamed. Just
me…

I didn’t measure or weigh anything. I remember when I was on a no carb diet 20+

yrs ago, I could have all I wanted, and I lost weight. so, I figured if I had
to sacrifice my potaotes and pasta, I was gonna E-A-T. Funny, after day one, my
numbers stayed hovering around the 80-100 mark. Once in awhile, I’d try
something new, and it would affect my bg. (Like crab legs or fake crab salad.
Boohoo!!) I LOVE onions, but, was careful to use the dehydrated one and only a
bit.

B’reakfast was like, a Denver Omlet (onion, green bell pepper, cheeze,
mushroom), w/bacon on the side. Or I’d have a breakfast bake, consisting of
eggs, broccoli, onion, garlic powder, cheeze. I’d use salsa, checking the
labels for carb content. Then, found Bufalo Sauce. Hot jalepeno sauce w/NO
carbs, and I love it… Or I’d have leftovers from dinner. It was horrid for
me to NOT have waffles, my FAV b’fst, whne the girls made them. But, I
survived…I cried, but, I survived. LOL

Snacks during the day were sunflower seeds, pork rinds, peanuts or cashews or
macademia. I admit, I’d have to have popcorn sometimes at the movies. I like
it soooo much, but, I’d only have a small amount, and would make sure to eat it
ONE kernel at a time, to make it last, and to enjoy it longer. I found I could
use my nuts instead, and that held me ok thru a movie w/o popcorn.
I use Wasa Crackers for crunch. Also, a trick is to take some cheeze and cook
on glass plate in the microwave ’til it bubbles. Let cool. Crusty like a
potato chip. Only did that once, tho.

Lunches, I’d make a bullion broth and add various frozen vegies, and whisk in an
egg, to make like an egg drop soup. Or I’d have tuna or egg salad on celery or
a bed of lettuce or Wasa cracker; or some meat w/some vegies and salad. I’d
get some shaved meat from the deli, and layer it in lettuce leaves, and pretend
it was a sandwich. Gave me the crunch of potatoe chips. (Even before, I’d not
eat chips on the side, as I’d have too many. I’d make a single layer IN my
sandwich, so the crunch factor was still there.)

Dinners were any meat or crustless quiche, salads, veggies, or a soup. A
combination of whatever I felt like, or what was handy or what was available.
I did find the faux-tatoes (the cauliflower) really did taste like mashed
potatoes if eaten w/other food, like steak or grilled burgers. I ate kosher
franks, as they had higher grams of fiber and less fat. I like franks and
saurkraut, (NOT much of the kraut, tho, but, cooking them together gave the
franks flavor, so, that was great. If not having saurkraut I used regular
franks w/LITTLE bit of ketsup and mustard, for dipping.

Once I sat and evaluated it, I really found I didn’t miss all the carbs, as much
as I had anticipated I would. I realized/remembered, I’ll eat anything!! And
as soon as food hit my mouth, I was happy. Sad, huh? But, that is how I am.
Oh well.

When we’d go out to eat, I just made sure to have a take out box brought WITH my
meal, so I could take off any offending food from my plate. Then, I had stuff
for the family to nosh on, or for me to create a meal for them later. I had
exchanged w/my DH one day a b’fast. He gave me his b’fst meat, and I gave him
my spuds and English Muffin, saying, I never realized we’d live out the nursery
rhyme: Old Jack Sprat Could Eat No Fat, His Wife Could Eat No Carbs! Good
laugh, that was.

Well, I’d try to keep my charbs under 20 gr a day. But, if I went over, I went
over. I’m sick and tired of beating myself up for not being "perfect". But,
I’d make my limit to stay under 50.
I’m now starting to get off of diet soda. Will drink lots more green tea. Lots
of great stuff in it, I hear.

I use tons of suppliments. Don’t know if they work, but, for sure the bilberry
and lutein do! My eye doc was SUPER pleased my inner eye health is still good
and the dataracts have NOT grown since they appeared 4 years ago! I use ALA and
biotin, C & E, Flax Seed Oil, Calcium, Magnesium, Zinc, Potassium, Folic Acid,
CoQ10. I just bought some selinum and L-Lysine Hope some of this helps.

My doc, who was NOT into the low carb ‘thang’ had to admit, it sure did the job
for me, and told me to keep up the good work.
