Diabetic Fruitcake Nutritionals
Somebody on one of these groups posted a diabetic fruitcake recipe. You
will have to divide by the number of slices you get and how many slices
make a serving. By the way, the original didn’t say anything about
adding brandy or wrapping the cake in bourbon-soaked cheesecloth.

Need to disagree a wee bit here. When I took my HMO’s diabetic education
course we were told that not all fiber can be discounted. Only the
indigestible portion. Now the ensuing discussion on how to tell when you
can discount fiber was, as I recall, somewhat confused and time ran out.
Now some food data sources cite ‘fiber,’ ‘dietary fiber,’ ‘non-digestible
fiber’ and I suppose there are more variations. It is a question where
some top expert opinion is needed.
